Mushroom and Onion Stir-fry

This is an excellent choice for big appetites and a warming dish for chilly winter days.

Ingredients :

  • 1 ½ Tbs. olive oil

  • 2 large onions, quartered or slice.

  • 10 to 12 oz. button or sea mushroom, thinly slice.

  • 1/4 turmeric powder.

  • 1/4 cumin powder

  • pinch of cumin seed

  • two green chili chopped

  • salt as per taste

  • coriander leaves for garnish

Procedure :

Cut the mushroom into quartered or sliced.

In a large nonstick skillet or wok, heat oil over medium-high heat. Add cumin seed and chili fry for two mins.

Add onions, and stir-fry until golden, about 10 minutes.

Now add mushrooms, and reduce heat to medium,cook,Add turmeric powder cumin powder and salt to taste. stirring once or twice, until softened and juices are released, 5 to 7 minutes.

Increase heat to medium-high, and stir-fry until mixture is heated through, about 5 minutes. Season with 1⁄4 teaspoon freshly ground pepper and coriander leaves. Serve hot.
